Opor Ayam: Indonesian Spiced Coconut Chicken
(This is as close to Indonesian comfort food as it gets!)
|4 chicken breasts|
|2 T. fresh lime juice|
Slice and saute the onion, then add chicken with marinade. Saute together, then simmer on low for 40 minutes. Add lime juice at the end and adjust seasonings to taste.
|8 sliced mushrooms||4 ground macadamia nuts (optional)|
|3 large cloves garlic||1/4 cup light soy sauce|
|1 tsp nutmeg powder||1.5 cup cream of coconut (santan)|
|1/2 tsp salt||1/3 cup milk|
|pepper to taste||2 bay leaves|
|1 inch chopped ginger||1 bunch lemon grass, chopped|
|1 tsp coriander powder|
Marinate chicken in combined ingredients for at least one hour.
