Opor Ayam: Indonesian Spiced Coconut Chicken

(This is as close to Indonesian comfort food as it gets!)

The Chicken

4 chicken breasts
1 onion
2 T. fresh lime juice

Slice and saute the onion, then add chicken with marinade. Saute together, then simmer on low for 40 minutes. Add lime juice at the end and adjust seasonings to taste.

The Marinade

8 sliced mushrooms 4 ground macadamia nuts (optional)
3 large cloves garlic 1/4 cup light soy sauce
1 tsp nutmeg powder 1.5 cup cream of coconut (santan)
1/2 tsp salt 1/3 cup milk
pepper to taste 2 bay leaves
1 inch chopped ginger 1 bunch lemon grass, chopped
1 tsp coriander powder  

Marinate chicken in combined ingredients for at least one hour.
